Meet The Painswick’s Head Chef, Jamie McCallum.

Jamie has previously worked at several top restaurants including Gary Rhodes at Rhodes 24 as Senior Sous Chef, as well as Head Chef at the Michelin starred Wild Honey with Anthony Demetre. He’s also gained experience working for Waitrose Cookery school, creating recipes and teaching classes, and most recently for a restaurant supplier, Flying Fish Seafoods.

Since joining the hotel in 2017, Jamie has put his culinary stamp on the food at The Painswick, taking inspiration from the changing seasons and past cooking experience, he has created imaginative and understated menus, using fresh local ingredients that pack plenty of flavour and punch.

Some of recent seasonal highlights include a Crisp pigs cheek fritter, beer pickled onion, kimchi mayo and a rice pudding with Yorkshire rhubarb and blood orange and a hugely successful Tasting Menu, which launched in early 2022.

Jamie will be presenting two of his signature dishes.

  • Cornish brill/turbot, Scottish girolles, peas, lime
  • A quick ceviche of the trimmings from the brill/turbot, Isle of Wight tomatoes, gooseberry
