Cake baker Kate Saunders is taking baking with vegetables a step further from her Blackberry Cottage – an idyllic shepherd’s hut in the Berkshire countryside, heady with the scent of baking – she specialises in cakes with “secret” ingredients, from parsnip, apple and ginger tray bakes to a sweet, moreish butternut squash and honey cake.
While Kate admits that “a cake is a cake”, and should always be a treat, she strives to develop recipes in which vegetables are the main event, the “biggest ingredient in the cake”. Introducing vegetables in such proportions not only means that a slice or two can contribute to your five-a-day but also refined sugars and fats can sometimes be reduced.
Kate also runs several one-day cookery courses where she show’s people how to bake cakes using vegetables, unrefined sugars and alternatives to traditional flour.
